Pinot Blanc is a rare variety, also special to us, as it is harvested from the 70-year-old white grape plantation located at the highest point of Guard Mountain. There are a few bunches per stem, but every year the grapes ripen their small harvest with honor, which we accept with great respect and deep appreciation. To the best of our knowledge, we prepare the wine for aging in acacia wood barrels, which we shape and round with the battonage process over 12 months. We can say that we get a wine with 3 faces, it has the character of barrel spices reflecting the green dill notes of acacia wood, the salty and mineral character drawn from the volcanic subsoil, and a refined finesse hidden in a bed of creamy buttery body.

Why an acacia barrel?

Pinot Blanc is a lighter variety than Chardonnay. When we bought our new barrel set in 2015, we eagerly awaited the miracle of Pinot Blanc in the first-fill barrique barrels, but unfortunately we had to be disappointed because the wood effect was too strong. We continued to think about the possibilities of the variety and the development of our own style, and that’s how we came up with the idea of ​​trying to achieve the miracle with acacia barrels. But the special flavor character of the acacia wood is simply not enough for the miracle, but in the light of our desire for harmony, we thought about using larger barrels, where the presence of the wood is not so strong. The lighter Pinot Blanc, like a delicate woman, wears various accessories to bring out her best form. This is how we dressed it in delicate green dill barrel spices, volcanic salty and mineral flavors emphasized by the old vines, and the creamy and buttery dressing of battonage. Taste it, feel it, think about it.

We further tightened this regulation for ourselves, according to which we only work with grapes harvested from Vinica.
