Guard Mountain

The Guard Mountain is a multi-million-year-old deep-sea volcano. Although it is now inactive, it boasts many different rocks, including granite, andesite, tuff, petrified lava and, last but not least, iron ore. Thanks to the sea, a yellowish sedimentary layer was formed on the surface of the volcano, in which the dead marine organisms and plants created a layer of limestone. The aforementioned rocks and volcanic layers give our wines great acidity and minerality.

Our vineyards are located in Vinica. We produce more than 10 types of wine, mainly white wines, but we also offer sparkling wine, schiller, and red wine from the best vintages. Our philosophy focuses on quality winemaking and the demanding service of our clientele. Therefore, the production of our wine starts with the care of the grapes, including the annual cutting of side shoots, cluster selection, and crop limitation. We consider it very important to reduce the capital load to between 0.5-1.0 kg, as this will concentrate the flavors in the grapes and ultimately in the wine.

It is an important task for us, winemakers, to preserve the flavors and aromas created by nature in our wines as much as possible, and to serve this in the most pleasant form to our wine-loving consumers. That’s why we only use wild yeasts, which develop on the skin of the grape and later react with the bacterial culture of the cellar. Thus, during fermentation, a unique flavor and aroma is created, which beautifully reflects the characteristics of the given vintage. Under the name CSERNUS, we do not guarantee that we make the same wine every year, but we do guarantee that you will love it.

I met the Csernus family when I taught them at the WSET3 (Advanced) training in Budapest. After a few years, they approached me to help put together the technology of the Csernus Cellar and to support them as a consultant on the way to quality winemaking. I felt the invitation was both an honor and a challenge!

In order to process the grapes as gently as possible, we have replaced the previous technology over the past three years. Using gravity, we process the grapes with gentle pressing, and the fermentation is controlled spontaneously, just by changing the temperature. Great wines are born! Memorable bottles with a modern style, in line with international tastes, of which the owners can already be proud.

The Csernus cellar is on the best path towards international style. Taking advantage of Vinica’s natural features, this wonderful, still hidden growing area will soon be on the map of wine lovers. That’s why we work every day!

Making chocolate has been a part of my everyday life for a while now, in which I find joy and at the same time a form of relaxation. Making bar chocolate was the beginning, where I learned the basics, and together with it, the idea of pairing chocolate with wine was born in the family. At first it seemed like an impossible undertaking, since the basic rule of pairing wine and food is that the wine should always be sweeter than the food paired with it. Thus, the relationship between sweet chocolate and dry wine was a seemingly unattainable dream. By playing with the flavors for a long time, we learned how to bring the sweetness of chocolate below the level of dry wine, and then lo and behold, the flavor combinations started to work. Together with my family, we created the flavors of our three types of chocolate in such a way that it best complements and takes the feeling of tasting chocolate and wine together to a higher gastronomic experience for you.

Chocolate White

Chocolate, as a symbol of elegance and sophistication, already appears in the ancient legends of the Aztecs. This candy made from cocoa beans is often referred to as a medicine that nourishes, refreshes the mind and helps overcome fatigue. We would like to convey to you the beneficial effects of chocolate, as well as an unforgettable experience that you can experience by tasting it together with our wine. As in winemaking, we strived for quality and harmony of flavors. This salty, roasted almond, white chocolate is made for our wines produced with the battonage process. The minerality of the wine and the buttery, creamy taste combined with the salty, roasted almond character of the chocolate form a unity.

This candy made from cocoa beans is often referred to as a medicine that nourishes, refreshes the mind and helps overcome fatigue. We would like to convey to you the beneficial effects of chocolate, as well as an unforgettable experience that you can experience by tasting it together with our wine. As in winemaking, we strived for quality and harmony of flavors. This dark chocolate, sprinkled with cocoa beans and dried cherries, was specially made for our barrel-aged Pinot noir wine. The cherry topping emphasizes the fruitiness of the wine, which the crushed cocoa beans lead to the sweet side. The aftertaste of the chocolate is enhanced by the smoke and warms the smell of the burned barrique barrels.
