Battonage Chardonnay

Battonage is a lifestyle, we stir the fine lees in the barrels every week for 12 months and thanks to that a creamy, buttery flavour is released from the dead yeast culture. We work with barrels from Hungarian coopers, three-quarters of the wine was aged in 6-7-year-old barrique barrels from Barna Szegedi and Attila Dózsa, and one quarter was aged in first-fill barrique barrels from Kádár Hungary. Used and new barrels provide an elegant vanilla and slightly smoky character, which is well combined with southern fruits, mango and banana character of the chardonnay. The wine is mostly characterized by harmony and elegance with a creamy, buttery body.

The soul of Battonage Chardonnay

The soul of Battonage Chardonnay is provided by aging in barrels, which is caressed for 12 months by the battonage process. The choice of barrel is never easy when it comes to white wines, as each barrel brings out a unique character from the given vintage during 12 months of maturation. We choose the barrels based on the place of origin of the raw wood material. The Zemplényi oak is a wood material with a more porous, rare fiber structure, which allows more oxygen into the barrel during aging, so the given wine will bring more mature, rounder and creamier characters to the blend. But every coin has two sides, the round character needs a more sparkling, fiery, fruity element to create the final harmony. This effect is achieved, for example, in barrels made of wood grown on volcanic subsoil, which, due to the harsher properties of the soil and the exposure of the forest, produces wood with a denser fiber structure, so the wine receives less oxygen during maturation, thus being able to remain vibrant, more fruity, and more fiery. For our wine Battonage Chardonnay, we combine the two styles in such a way that the creamy butter flavour is in harmony with the elegant smoky and vanilla flavour brought by the barrel spices. We create a wine that more expressively conveys the world of battonage to you in the light of harmony.
