Fossil Chardonnay
2022
Fossil Chardonnay is the top white wine of our winery, the pre-virgin harvest of our newly planted Chardonnay plantation, the really strong vines gifted us with 1-2 clusters of grapes. During the gravity processing, we separated the virgin juice from the press, fermented it separately and then aged it in Seguin Moro barrels until November. Like all Chardonnay, we make this one using the battonage method. The sip is extremely silky, elegant, the French oak dried on the Atlantic coast has endowed the Chardonnay with a captivating vanilla flavor, which is further rounded off by the creamy buttery flavor in the long finish. We can proudly say that it is the most elegant and captivating wine of Guard Mountain.

Seguin Moreau – Royce Royce barrels
It is not for nothing that Seguin Moreau has earned itself the reputation of being the Royce Royce of barrel makers in the World, as they are at the forefront of the most innovative solutions in barrel making, for example, they created a spherical barrel. Our work is supported by barrels crafted using the Aqua-flex technique. The oak wood, selected from the Richelieu Forest, is seasoned for three years on the Atlantic coast under cold, salty, humid, and windy conditions. This unique environment brings out a different flavor profile in the oak compared to wood seasoned in Hungary under inter-continental conditions. The toasting process takes place in a digitally controlled and automated toasting chamber. After toasting, the hot barrels are immersed in ice-cold water, causing a thermal shock that contracts the wood’s porous structure. The hoops are then fixed onto the barrels to reinforce them, resulting in a denser grain structure. For us, during the ageing of Chardonnay, this process delivers a fresher and more fruit-forward character, complemented by a refined touch of vanilla and a subtle smoky note, all in the spirit of infinite elegance.
